Here’s how I turned it into a pizza while keeping the vibe of the original recipe from Food Network intact.
Caprese Chicken Pizza with Pomegranate Glaze
This Caprese Chicken Pizza takes the fresh flavors of a classic caprese dish and transforms them into a gourmet-style pizza that feels straight off the menu at a trendy wine bar. Tender chicken, fresh mozzarella, juicy tomatoes, basil, crunchy pistachios, and a sweet-tangy pomegranate glaze come together on a crispy golden crust for the perfect balance of savory, fresh, and slightly sweet. It’s an easy homemade pizza recipe that’s perfect for summer dinners, pizza night, or casual entertaining.
Ingredients
- 1 prepared pizza dough (store-bought or homemade)
- 1 boneless chicken breast
- Olive oil
- Kosher salt + black pepper
- 1 heirloom tomato, thinly sliced
- 8 oz fresh mozzarella, sliced or torn
- Fresh basil leaves
- 2 tablespoons crushed pistachios

- 2 cups pomegranate juice
